The Pastry Chef Carl Marletti led a masterclass at Long Beach on Tuesday 16 October. During this workshop, the chef shared his knowledge to the Pastry Chefs of Sun Resorts, and also created two new pastries originating from a great collaboration between Long Beach and himself. This collaboration is the second one for the creation of pastries after three years. The two new creations that are currently sold in ‘avant-première’ at Carl Marletti shop, 51 Cerisier Street, 75005, Paris, will be proposed in one of the restaurants of Long Beach during the month of October.
The first creation is the Long Beach Kokoro, “heart” in Japanese, which is a green lime Dacquoise, with wild strawberry, and a coconut and white rum mousse. The second one has a doughnut form, with strawberry and vanilla and fizzy sugar bits that children will surely enjoy. This masterclass was organised to give the opportunity to the Pastry Chefs from Sun Resorts to recreate the art of Carl Marletti.
