Since Saturday 27th October, Mauritius has registered the biggest scrambled eggs of the world weighing 2466 kg (2,466 tonnes), prepared by 24 chefs who were assisted by 220 employees of Inicia that wanted to mark its 40th anniversary with this event. This record will enter the Guinness Book of Records after validation done by the judge from the GUINESS WORLD RECORDSTM who especially came to Mauritius from London to attend this unique culinary performance. The previous record was achieved in Polland in 2014 with scrambled eggs weighing 1566 kg.
The pre-cooking preparation – breaking and whisking 36 000 refrigerated eggs, took 1 hour 45 minutes. “To cook scrambled eggs of that size was a real challenge. First of all, we needed the adequate equipment. The utensils had to be huge and of good quality. The giant pan, whisk and stand are in stainless steel 316, one of the best material for kitchen equipment. We applied strict techniques that we already master at normal scale for the cooking itself,” said the President of the Mauritian Chefs Association Mooroogun Coopen, who led the preparation of the scrambled eggs in collaboration with other 23 chefs.
Besides the 36 000 eggs, the other ingredients used for this giant dish included 375 kg of butter, 341 litres of milk, 6.8 kg of salt, and 2.43 kg of pepper. The dish took almost 3 hours to cook. Around 2000 portions were distributed on site at Bagatelle, and 8000 other portions were offered to underprivileged people through the network of Caritas.
