Michelin starred Chef Marco Stabile was in Mauritius between the 9th and the 13th July to take part in a workshop with 14 chefs from Beachcomber Resorts & Hotels. During these five days, the chef shared his knowledge and know-how with the chefs about traditional Italian cuisine, while introducing a touch of modernity. The chefs learned or rediscovered the most popular dishes, namely risotto, pizza and gnocchi among others. The week ended with a tasting lunch in the presence of the Executive Chefs of Beachcomber, with pizza, pasta, risotto, Florentine steak, tortellini stuffed with chiantigiana beef, taglioni, among other delectable flavours of Italy on the menu.
“This one-week programme by the side of a starred chef gave us the opportunity to deepen our knowledge of Italian cuisine. We have learned much on how to value our basic products,” said the Chef Arvin Bissessur and Kris Permall from Canonnier Beachcomber and Paradis Beachcomber respectively. Chef Stabile whose cuisine is renowned internationally, obtained his Michelin star in 2011 and is the owner of the Ora Aria in Florence. His visit here “is to make the chefs discover different ways to cook the basic products of Italian cuisine such as pasta, rice…The understanding of the cooking process of these signature ingredients gives us the opportunity to transform them into gourmet food. It is important not to only repeat the techniques and apply the recipes”.
